Nathan moved to Australia from the United States in 2005 and embarked on his career as a chef. He has always stayed true to the idea that France is the birthplace of modern cuisine. After travelling throughout France and seeing all that it has to offer, Nathan's passions grew and he became even more inspired to bring a small piece of those experiences back to his restaurants.
He has owned and operated multiple award winning restaurants over the last 10 years in Australia. Focussing on modern French cuisine using the best local produce available has inspired him to bring a unique twist on many classic dishes. His most recent restaurant, Bistrot Plume, was awarded One Chefs Hat in the Australian Good Food Guide.
Also having a passion and love of wine, Nathan has completed studies in the WSET program to further his knowledge and to provide an even better hospitality experience for his guests.
Kate has a passion for creating beautiful things, whether it be setting the dinner table for a party with vintage china and crystal glassware, making vignettes in the garden for a peaceful place to take a coffee, or helping Nathan create the perfect plate to showcase his cooking.
Her love of travel, culture, food and wine, collecting French tableware and gardening shines through in the elegant and stylish home she has created to welcome friends, family and clients.
With her innate gift for hospitality, Kate has owned and operated multiple restaurants and cafes, completed her level 2 WSET with high distinctions, and designed and renovated all of the couple’s food and wine businesses.
